MIM #9 - Angel Hair Pasta with Creamy Mushroom Sauce

Hope you all had a great weekend!  I did!  We had rain this weekend but are hoping to see the sun for the next four days (after today).  I am giving you my recipe for another pasta dish.  Can you tell that I love pasta?  Hope you enjoy it!

Angel Hair Pasta with Creamy Mushroom Sauce - Serves 2
4 ounces angel hair pasta (I use the Barilla Plus)
1 1/2 cups fresh mushrooms, sliced
1 medium onion, chopped
1 Tablespoon butter
3 ounces light cream cheese
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup skim milk
2 Tablespoons chives, snipped

Cook pasta according to package directions; drain.  Meanwhile, for sauce, in a medium saucepan, cook the mushrooms and onion in the butter until tender.  Stir in cream cheese, salt and pepper.  cook and stir over low heat until cheese it melted.  Gradually stir in milk and chives; heat through.  Pour sauce over pasta.  Toss to coat.  Serve immediately.
The whole recipe only has approximately 750 calories so add a tossed salad and maybe even a slice of toasted garlic bread.
Note: My DH added some ground beef to his and said it tasted like beef stroganoff.

  1. I love recipes that have few ingredients (not counting spices)so I'm trying this. I might add ground turkey.
